Glass previews Simon Rogan’s new seasonal menu at Aulis Hong Kong

THE first foreign restaurant from famed British chef Simon Rogan, Aulis is a delightfully intimate restaurant located on Hong Kong’s Causeway Bay.

Causeway Bay isn’t exactly renowned for having a personal touch. Yet, in amongst the retail mania of its colossal high-street, always heaving with comers and goers, is Aulis –a serene hideaway from the outside world.

Borrowing its name from the late Finnish chef Aulis Lehtimaki (an early collaborator at Rogan’s two Michelin-starred London restaurant L’Enclume), Aulis is due to debut a series of exciting new creations this month.

With Rogan’s tasting menu, diners can expect the unexpected, with daring twists on British classics alongside crowd pleasers with a more local palette in mind. The Aulis kitchen prides itself on innovation, and with only 12 guests seated at a time, every meal promises to be a genuinely personalised experience.

The Truffle Pudding is an exquisite savoury reinvention of British dessert staple, bread and butter pudding, layering a warm croissant pastry with truffle custard. Perhaps the most eye-catching new offering is Aulis’ Sea Urchin Custard, which draws from two of Hong Kong’s most adored premium ingredients: sea urchin and caviar. It’s also worth noting that the caviar has been specially developed under the Simon Rogan brand by esteemed caviar house Petrossian.

While Rogan’s vegetable dishes draw from a wealth of locally farmed produce, the Raw Beef in Coal, Pumpkin and Sunflower features a dry-aged Welsh sirloin beef steak dressed in coal oil – an oil contrived by infusing the yakitori charcoal from the end of serving time, with grapeseed oil. The beef is accompanied by pickled butternut squash, sweet burnt onion, and a sunflower emulsion.
