Enjoy a taste of The Murray luxury at home with these bespoke cocktail recipes

IN our current climate, visiting a bar to enjoy a cocktail is definitely not recommended and may not even be possible, depending on your location. At Glass we recommend staying home, but we also believe that you can enjoy the luxury experience of The Popinjays Bar at The Murray Hotel from your very own kitchen.

The hotel invites you, for the meantime, to indulge in their bespoke cocktails from home, and even perhaps take up a new skill – mixology – while in self-isolation. Whether alone or with your household, these cocktail recipes are transportive, perfect for anyone who appreciates and yearns for the luxury touch of The Popinjays Bar.

The Brooding Macaw cocktail, available at the Popinjays Bar for HKD 150

THE BROODING MACAW

  • 50 ml bauhinia gin
  • 25 ml lychee liqueur
  • 25 ml sakura syrup
  • 1/2 cup cranberry juice
  • 1/2 cup pineapple juice
  • A splash of citrus

This gin-based cocktail carries refreshing notes of natural botanicals with fragrant floral scents. A sweet medley of lychee, cranberry and pineapple adds a fruity dimension to the flavour profile, making every sip as irresistible as the first.

Build the drink over plenty of ice in a glass, stir gently and garnish with a slice of orange and sprigs of mint.

Coco Roco, available at the Popinjays Bar for HKD 150

COCO ROCO

  • 50 ml Doorly’s 5yo rum
  • 25 ml coconut liqueur
  • 1 cup pineapple juice
  • Splash of yuzu juice
  • Splash of orgeat syrup
  • Splash of pomegranate syrup

The five-year-old Bajan rum offers aromatic notes of tropical fruits and is well balanced with the mild sweetness of coconut liqueur. Pineapple, zuzu juice and pomegranate syrup give your glass a slight and refreshing tanginess.

Pour the ingredients into a cocktail shaker then fill up with ice. Shake well then strain. Garnish with a raspberry.
